Smokey Lentil and Spinach Turkey Soup

An easy weeknight meal made in less than an hour but tastes like it’s been cooking all day is our favorite kind of meal. We made this Lentil and Spinach Soup with our Smoked Turkey Thighs and Leg to give it a smoky flavor you’re going to love.

Ingredients

  • Smoked Turkey Thigh
  • Smoked Turkey Drumstick
  • Onion (Diced)
  • Celery Stalks (Diced)
  • Garlic Gloves
  • 4 cups Chicken Broth
  • 2 cups Dried Lentils
  • 1 tsp Pepper Flakes
  • 1 can Crushed tomatoes
  • 5 cups Spinach
  • 2 tsp Red Wine vinegar
  • Parley for Garnish

Directions

  1. Turn pressure cooker on and set to “Saute.”
  2. Place some olive oil in your pressure cooker and saute the onion, celery and garlic until vegetables are soft.
  3. Once vegetables are cooked add the broth, dried lentils, pepper flakes, and crushed tomatoes to the pot. Give it a good stir.
  4. Then place one Smoked Turkey Thigh and one Smoked Turkey Drumstick nestled into the pressure cooker.
  5. Turn pressure cooker off and then turn back on to “pressure cooker” setting on “meat and stews.” Cook for 12 minutes and then slow release.
  6. Once the pressure cooker is finished, remove the Turkey Thigh and Leg and place on a seperate plate. Shred the turkey and then return to pot.
  7. Add the spinach and red wine vinegar. Season with salt and pepper to taste.
  8. Garnish with parsley and enjoy!
